According to the Real Bread Campaign, the four essential ingredients in bread are flour, water, yeast and salt. Any other added ingredients, be they herbs, seeds, nuts or oils etc., should be 100% natural.
The problem is that the majority of bread sold in British supermarkets bears little resemblance to real bread. It is pumped full of artificial processing aids, artificial additives, flour ‘improvers’, dough conditioners, preservatives and chemical leavening.
Current food labelling legislation means manufacturers are not obliged to declare the addition of so-called processing aids. This means it’s virtually impossible to make an informed consumer choice.

Industrially produced bread is often packed with artificial additives, large quantities of salt and fat plus enzymes to make it rise faster. Only when dough is allowed to ferment slowly can naturally occurring beneficial bacteria work to make the bread more digestible, nutritious and tasty.

Independent bakeries boost local economy, providing valuable skilled employment opportunities to local people and a place for social interaction.
- Good for our planet
The shorter the distance from field to plate, the less harmful the impact of transportation on the environment.
